Shrimp Salad with Mango and Avocado
2 pounds large cooked shrimp chilled or at room temperature.
½ cup thinly sliced red onion
3 tbs chopped fresh cilantro
2 tsp grated lime rind
2 tbs lime juice
1 tbs extra virgin olive oil
½ tsp salt
¼ tsp pepper
1 jalapeno pepper, seeded and minced
2 ripe mangos peeled and cut into 6 wedges each
1 peeled avocado seeded and cut into 12 wedges
Combine onion and next seven ingredients through jalapeno, into your large wooden salad bowl. Add shrimp. Place ½ cup to ¾ cup shrimp mixture into your individual wooden salad bowls. Arrange 2 mango slices and 2 avocado slices in the center of the bowl and serve.
