- 4 lbs. boneless-skinless chicken breast cubed
- 2-3 tbsp sun dried tomatoes chopped
- 2 cloves garlic chopped
- Juice and zest of 1 lemon
- 1/4 cup cilantro chopped
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup Romano or Parmesan cheese grated
- 1 scallion chopped
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp ground oregano
- 1 tsp ground cumin
- 2-3 tbsp smooth mustard your favorite
- 2 tbsp balsamic vinegar
- 2-3 tbsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
- Combine all of the ingredients for the rub in a medium sized bowl and set aside.
- Place the cubed chicken a little at a time in the food processor and process to desired consistency.
- Place the ground chicken in a large bowl and add the remaining ingredients for the burgers.
- Shape the burgers into a ball and roll in the rub; then flatten the burgers to desired thickness.
- Grill burger until juices run clear. The cooking time depends on the thickness of the burger.
- Serve with your favorite lettuce, tomato and cucumber.
- Combine all of the above ingredients in a small bowl and whisk.
- Adjust the flavors for the dressing to your liking.
- Use on salad and for burger.
