There is nothing like dunking a warm cookie in a cold glass of milk or a hot cup of cocoa or sweet milk tea. This is a simple recipe combining sugar and spice to make something quite nice.
- 1 tbsp lemon zest
- 3/4 cup unsalted butter softened
- 1/3 cup packed light brown sugar
- 1 egg
- 1 tbsp Russian Mulling Spice
- 1/4 tsp Lemon Ginger Curry
- 1/2 cup Almond Flour
- 1/2 cup Arrowroot
- 1/2 cup Brown Rice Flour
- 1/2 cup white chocolate chips
- Preheat oven to 350 degrees F.
- Lightly grease two baking sheets.
- In a large bowl beat the butter and sugar with an electric mixer until mixture is creamy and light.
- Add the egg, a little at a time, beating well between each addition.
- Add the lemon zest.
- Add the sifted flour, Russian Mulling Spice and Lemon Ginger Curry.
- Using a wooden spoon, stir well until the mixture forms a stiff dough.
- Knead dough lightly in the bowl and, add white chocolate chips.
- Using your hands, shape the dough into 25 small balls.
- Place the balls on the greased baking sheets, leaving room between each to spread during baking.
- Flatten each cookie slightly with the flat back of a cup dipped in flour.
- Bake for 10 minutes until the cookies become a rich golden brown.
- Remove from oven and let cool on a heatproof surface for five minutes. Then, with a spatula, transfer cookies to a cooling rack until cold.
